Health Crackers & Cheese, Rosemary and Walnut Crackers: Daring Bakers Challenge, July 2012

I really liked Daring Bakers Challenge for July. We often prepare home-made snacks, so task that Dana McFarlane gave us was fantastic opportunity to try some new ideas – making crackers! 🙂 Dana, thank you for this challenge!

I followed recipes that Dana gave us totally, because I really liked combinations in them. Especially fantastic taste of crackers with cheese, rosemary and walnuts. Next time I will force myself to try some other combination, but this one will definitely become part of our family`s snack menu. 🙂

HEALTH CRACKERS

Ingredients:

– 240 g rolled oats
– 280 g all purpose flour
– 80g wheat germ
– 40 g sugar
– 1 teaspoon salt
– 180 ml vegetable oil
– 240 ml water
– 1 large egg white
– for topping: poppy seeds, sesame seeds, salt…

Directions:

Mix the oats, flour, wheat germ, sugar and salt together in a large bowl or bowl for the standup mixer.

Combine the water and oil and stir into the oat mixture until it comes together and a dough forms.

Form dough into a disk and allow to rest in the fridge for about 20 minutes but up to a day if you are making the ahead.

Preheat the oven to moderate 325°F/160°C/gas mark 3.

Divide the dough into quarters and work with one piece at a time, allowing the remaining pieces to stay in the fridge as you proceed with rolling out the crackers.

On a lightly floured surface, roll the dough to about 1/16 inch (1½ mm) thick and transfer to a parchment lined baking sheet by carefully wrapping the dough around the rolling pin.

Brush the dough with the egg white mixed briefly with a tablespoon of water and sprinkle with seeds and salt of your choice.

Cut the dough with a pizza wheel and bake for 25-30 minutes until browned. Crackers that are not crispy once cooled may be returned to the oven.

Store in an airtight container and eat within two weeks

CHEESE, ROSEMARY AND WALNUT CRACKERS

Ingredients:

– 115 g butter, well softened
– 225 g hard cheese (you can choose your favourite)
– 190 g all purpose flour
– 1 teaspoon salt
– 60 g finely choped walnuts
– 1 tablespoon finely choped rosemary

Directions:

Combine butter, rosemary and cheese in a stand mixer and beat well (can also be done by hand)

Add the flour, salt and nuts and stir to combine

Form the dough into two tight logs and wrap with cling film

Chill for at least an hour and up to several days. The log can be frozen at this point for several months.

Heat the oven to moderate 325°F/160°C/gas mark 3.

Slice a log into 5mm (1/5 inch) coins and place on a parchment lined baking sheet

Bake about 10 minutes until golden brown

Store in an airtight container and eat within three days

Jako mi se dopao ovomesecni zadatak u okviru grupe Daring Bakers. Dana McFarlane (Dana nije blogger, pa zato nema linka na njen blog) nam je dala nekoliko recepata za krekere. Trebali smo izabrati dva i to razlicita po nacinu pripreme. Smeli smo kombinovati i menjtai zacine po svojoj volji. Inace, jako volim da pravim grickalice u kucnoj varijanti, pa mi se ovaj zadatak bas dopao. Planiram i ostale recepte koje ovaj put nisam pravila, uskoro isprobati. Bas dobro zvuce… Zadane recepte nisam uopste menjala, jer su mi se stvarno dopali. Jedino sam u drugom receptu koristila kackavalj umosto chedar sira. A i vreme pecenja mi se razlikovalo, pa cu to napomenuti u receptu.

ZDRAVI KREKERI

Sastojci:

– 240 g ovsenih pahuljica
– 280 g psenicnog brasna
– 80 g psenicnih klica (koristila sam suve)
– 40 g secera
– 1 kasicica soli
– 180 ml ulja
– 240 ml vode
– 1 belance
– za posipanje: susam, lan, kim, suncokret…

Izrada:

U vecoj ciniji pomesati ovsene pahuljice, brasno, psenicne klice, so i secer.

Posebno pomesati ulje i vodu i dodati u suvu mesavinu. Mesati dok se ne formira testo. Zbog vece kolicine ulja nije mnogo lepljivo.

Oblikovati testo u kuglu, uviti u foliju i ostaviti u frizideru 20ak minuta da se odmori.

Ukljuciti rernu da se greje na 160C. Pripremiti dva velika pleha (od rerne) i obloziti ih papirom za pecenje.

Nakon odmaranja, testo podeliti na 2 dela. Uzimati deo po deo, a ostatak neka ostanu u frizideru. Staviti komad testa na pobrasnjenu podlogu i rastanjiti na 1,5 mm debljine (sto tanje, pre ce biti hrskavi). Ja sam testo razvijala direktno na papiru za pecenje, pa zajedno sa papirom prenela na pleh. Tako mi je bilo lakse.

Testo premazati belancetom i posuti dodacima po zelji. Sto vise i raznovrsnije, to bolje. Nakon toga, pomocu ostrog noza, iseci ga na pravougaonike i staviti u rernu.

Peci 20-30 minuta, tj dok ne porumene (to se ne vidi bas lako jer je testo tamno). Izvaditi iz rerne i ohladiti, a ohladjene podeliti na posebne krekere.

KREKERI SA SIROM, RUZMARINOM I ORASIMA

Sastojci:

– 115 g omeksalog putera
– 225 g kackavalja (ili drogog suvog sira, po izboru)
– 190 g brasna
– 1 kasicica soli
– 60 g seckanih oraha
– 1 kasicica seckanog svezeg ruzmarina

Izrada:

Mikserom dobro umutit puter, ruzmarin i sir.

Dodati brasno, so i orahe i mikasti samo da se sjedini.

Podeliti testo na dva dela, pa svaki oblikovati u sto pravilniji valjak. Valjkove umotati u foliju i ostaviti u frizider na bar 1h ili na 20ak minuta u zamrzivac (ovako sam ja radila).

Ukljuciti rernu na 160C. Pripremiti pleh i obloziti ga papirom za pecenje.

Stvrdnute valjkove seci ostrim nozem na kriske debljine 5 mm. Ove kriske slagati na pripremljeni pleh.

Peci 20ak minuta (u originalnom receptu pise 10 min, ali kod mene to nije bilo dovoljno) dok rubovi ne pocnu rumeneti.

Ohladjene cuvati u hermeticki zatvorenoj posudi nekoliko dana.
