This month, in Daring Bakers Challenge, Francijn from Koken in de Brouwerij dared us to make traditional Dutch pastry: Gevulde speculaas or Stuffed speculaas. This is really fantastic and simple thing: two layers of fragrant speculaas cookie dough connected with homemade marzipan! Really delicious! I made Speculaas at home several times so far and I can recommend you great Ana’s recipe, but addition of home made marcipan is really great change. Francijn said that this kind of filled cookie is very traditional and that is the best part of this challenge. I also thank her on great recipe for mixture of spices for speculaas. Great thing is also that these cookies get better after several days when all aromas are developed. The only thing that I changed is that I couldn’t find mace, so I used more nutmeg instead and instead of given almond paste I made real marzipan using this recipe. ...
